Double Apple Cake - [ruth Gerdes Cuthbertson]
cakes, fruits
1/2 cup margerine with
1 cup sugar
1 beat in:
2 eggs
1 add:
1 1/2 cup chopped apples
1 teaspoon vanilla
1 toss:
2 1/2 cup flour, unsifted with
1 teaspoon each cinnamon, salt, and
1 baking soda.
1 stir into mixture, making
1 batter
1 core:
3 apples, cut into thin
1 wedges
Arrange some wedges on sides of a 9" round x 1.5" deep cake pan. Spoon in batter; level. Arrange remaining wedges on top. Drizzle with 2 TB melted butter. Bake at 350F for 55 minutes, or until done.
Cool 10 minutes; remove from pan. If desired, glaze apple topping with 1/4 cup melted currant jelly.
