Tante Sophie's Apfelsalat (Aunt Sophie's Apple Salad)

6 apples
2 egg yolks; beaten
1 teaspoon lemon juice
1/2 teaspoon salt
1/2 teaspoon white pepper
1 teaspoon mustard
1 tablespoon vinegar
1 tablespoon sugar
1 cup cream

: Peel and dice apples. Make a mixture of yolds, lemon juice, salt, pepper, mustard, vinegar, and sugar. Heat over a slow fire until it begins to boil, stirring constantly. Then add cream. Beat until it is cool.
