German Potato Soup #2

1 cup onions; diced small
1 cup celery; diced small
1 cup carrots; diced small
2 cup potatoes; diced small
4 tablespoon bacon fat
4 chicken boullion cubes
1/3 cup leeks; diced
1 teaspoon marjoram
1 1/2 cup instant potatoes water
1 salt and white pepper
Saute onions, celery, carrots in bacon fat about 5 minutes. Slowly add water boullion cubes, leeks and potatoes and cook at a rolling simmer for about 20 minutes. Add instant potatoes, marjoram, and salt and pepper to taste. Simmer 15 minutes
