Heringsalat (Herring Salad)

8 oz pickled herring; drained
1/2 each green pepper; seed and dice
1 each apple; tart, core and dice
1 each orange; sectioned and diced
2 teaspoon onion; grated
2 tablespoon vegetable oil
1 tablespoon vinegar
4 each lettuce leaves; cupped
Combine ingredients and marinate in refrigerator for at least 1 hour. Serve on inner tightly cupped lettuce leaves.
