Vegetable Medley (Leipziger Allerlei)

1 cup cut green beans
1 cup peas or lima beans
1 cup sliced carrots
1/2 head cauliflower, cut into
1 flowerets
1 boiling water
1/2 cup mushrooms, sliced
2 tablespoon butter
2 tablespoon flour
1 cup hot milk
2 egg yolks,beaten
1/4 teaspoon salt
1/4 teaspoon black pepper

Cook vegetables except mushrooms in small amount of boiling salted water for 35 minutes (use 1/2 teaspoon salt per quart of water). Drain. Saute mushrooms in butter. Blend in flour. Brown. Add milk. Cook, stirring, until thickened. Add a little of hot sauce to egg yolks. Return egg yolks to remaining sauce. cook. Stirring for 1 minute. Add seasonings. Combine vegetables and sauce. Mix . serves 8
